Happy Birthday to My Girl!
She is six, can you believe it?
We just came back from the vacations in Lithuania. The weather is as good as it can be in Iceland – +14ºC (57ºF), sunny and warm. Do not laugh, it was really sunbathing day here today. Meanwhile in Lithuania it was getting way over +30ºC (86ºF) and it was unbearable for me.
The oven broke just before our vacation so the grill and the microwave were saving the party. For the B-day cake I used the double recipe of my favorite cake-in-mug that I found in one blog of Lithuanian couple living in Australia (so sorry, forgot the title of the blog!) and updated it a little. The recipe is also good for all kind of chocolate goodies baked in the microwave: mini cakes in ramekins, muffins. Here it is:
Cake in the mug
You will need:
1 big coffee mug suitable for microwaving
4 tbsp wheat floor
1 tsp baking powder
4 tbsp brown suar
2 tbsp good quality cocoa
3 tbsp milk
3 tbsp vegetable oil
3 tbsp chocolate shavings
3 tbsp chocolate chips or coarsely chopped chocolate
Stir all the products in the mug adding the chocolate at the last and microwave on High (700-900 W) for 3-4 min. Cool down a little – it will be very hot from the microwave. Serve warm, with whipped cream or vanilla ice cream or as desired.
